CREAMY VEGAN SWEET POTATO SOUP
Have you ever had one of those days that you feel inspired and want to try out a recipe that pops in your mind? Well, I’m definitely not a chef and I created this recipe in less than 1 hour. And it turned out to be one of our favorites.
Ingredients:
2 big sweet potatoes
2 garlic cloves
1/2 onion
1/4 cup cilantro
2 tbsp coconut cream
2 tbsp olive oil
1 tbsp sea salt
2 cups of water (depending on what texture you want)
Steps:
Peel and cut 2 sweet potatoes in round circles.
Shop 1/2 an onion and 2 garlic cloves in small pieces.
In a medium sauce pan add 2 tbsp olive oil, 1/4 cup cilantro, onions, garlic, 1tbsp sea salt and sauté all the ingredients until slightly cooked.
Add sweet potatoes to the sauce pan and mix it all together.
Add 2 cups of water and let all the ingredients boil until sweet potatoes are easy to cut with a fork.
Add everything in a blender or a food processor (our favorite). Mix until texture is perfect. If more water is needed to make it a more liquid texture you can add warm filtered water.
