Oh how I LOVE plantains. Being born and raised in Puerto Rico I can tell you that eating plantains every day is a very common thing. I have a funny memory of the first time Doctor Cam went with me to Puerto Rico and he got very constipated. He ate plantains every day and years later now I can tell you why this happened. And it is actually a VERY good thing. Fiber! Not only have I included a very simple recipe you can play around with this fall, I have added 5 health benefits of plantains in our diet. When we aren’t used to eating so much fiber, things get backed up. I recommend adding this soup or a version of it at least once a week to start creating a healthy gut population!
The history of plantains includes a very cultural historic background. Puerto Rico was invaded by early European explorations in the 1500’s. Plantains were brought from Southeast Asia in the 1600’s and our ancestors started including this in their daily diets until it became a staple and I would say a MUST. Plantains are not only cooked fried, we bake them, we make them in soup, we create mofongo with them, tostones, arañitas, etc. They can be sweet, they can be bland, or they can be right in between! My abuelita always had a different version of a plantain every weekend we would come visit her. I love that I can share this part of my Limbi System with you! And thinking about it, not only are they so healthy, they are SO economic. Not more than one dollar per plantain at some places.
